What are spiked seltzers, anyways? 

Simply stated, hard seltzer is alcoholic flavored carbonated water. Contrary to popular belief, there is no vodka or even liquor in most hard seltzers. Instead, brewers create a spiked seltzer by fermenting cane sugar in a similar process to beer. Other grains, like rice or malt, can also produce the alcohol in spiked seltzer, making it a “flavored malt beverage”.  These spiked soda waters are low-calorie, low-carb, and typically have an alcohol content of around 4 to 8 percent. 

Who invented spiked seltzer? 

Nick Shields, a 5th generation brewer, invented the hard seltzer in Westport, Connecticut back in 2012. The idea came to Shields while sitting in a bar in Connecticut. As he observed woman after woman order a vodka soda, Shields realized there was an opportunity. By creating a canned vodka-soda-type beverage, he could satisfy this demand in the alcohol industry that had not yet been fulfilled. In 2013,  Shields set out to brew the first commercial batches of hard seltzer. Ever since, this refreshing beverage has been flying off the shelves. 

How popular is hard seltzer? 

This is certainly the summer of seltzer. As keto and other low-carb diets’ popularly grows, so does this low-carb beer alternative. Its popularity is both genderless and ageless, generally enjoyed by all. Since its creation, hard seltzer has seen impressive growth. Today, nearly all of the biggest names in beer have hopped on the seltzer bandwagon. As of 2019, hard seltzer made up 2.6% of total beverage alcohol, up from 1% the previous year. Many analysts believe that by 2021, spiked seltzer could be a $2.5 billion dollar industry.
