What is kombucha? 

Kombucha is a variety of fermented tea recognized for its fizzy, tart yet sweet flavor. The 2,000 year old fermented tea drink is sometimes referred to as mushroom tea. Typically, this tea is created using 4 ingredients: yeast, bacteria, sugar, and black tea. Brewers created the beverage through the process of fermentation. During the fermentation process, bacteria and yeast combine to create a SCOBY, or symbiotic culture of bacteria and yeast. The sugar in the mix feeds the bacteria and allows it to produce acetic acid. The result is a fizzy sensation with a mostly tart but mildly sweet taste. 

Does fermented tea have health benefits? 

Many fermented foods, like yogurt and tempeh, boast health benefits. Therefore, many nutritionists believe that kombucha, which is likewise probiotic-rich, is no exception. The probiotics found in fermented tea support gut health by improving digestion, reducing inflammation, and at times aiding with weight loss. What is hard kombucha? 

Similar to the creation process of regular fermented tea, brewers craft hard kombucha using 4 simple ingredients.The difference between the non-alcoholic and alcoholic versions is the ingredient ratio, type of yeast, and duration of fermentation. Unlike the non-alcoholic kombucha which is fermented 1 to 2 rounds, alcoholic kombucha requires a longer fermentation process. Additionally, breweries add larger quantities of sugar and yeast to increase the drink’s alcohol content. Hard fermented tea can contain anywhere from 3-8 percent alcohol. 

So, is hard kombucha really healthy? 

Well, kind of.

Although we would not go as far as to say hard kombucha is healthy, it is certainly healthier. Since probiotics generally do not survive in alcohol rich environments, hard kombucha does not have the same probiotic health benefits as regular mushroom tea. Yet, since the alcoholic drink is still a fermented tea, it likely contains antioxidants. Therefore, many believe that hard kombucha can be nutritious. While some continue to debate its health qualities, the idea that its a healthier alternative to beer is largely uncontested.
